This approach is a fundamental step in the evolution of French olive oil production, which needs to identify itself and guarantee its origin and know-how.
It is motivated by the desire to :
- Promote and protect the olive production and its typicality, based on a land with a strong identity: Provence,
- To value the know-how of the olive growers and millers,
- To guarantee to the consumer the origin and the typicity of the product,
- To allow the development of an economically profitable olive growing activity in Provence,
- To develop the valorization of the resources on the whole of the soil, in the respect of the environment and with for goal a durable economic development, while excluding the excesses of the productivism.
The geographical area of the AOC largely overlaps the former county of Provence and extends over the four departments of Vaucluse, Bouches-du-Rhône, Var and Alpes-de-Haute-Provence, as well as a municipality of Drôme, a few municipalities of Gard and a few municipalities of Alpes Maritimes.
Its terroir is delimited by olive groves on hills, foothills or micro-reliefs where the soils are well drained.
