Tapenade recipe - 4 people
200g pitted olives of the Baux de Provence or Nyons type
20g anchovies
25g capers
2 cloves of garlic
1 shallot
1 bouquet garni
10cl extra virgin olive oil of the type of olives used
Sweat the garlic and shallot in the olive oil (1 spoonful). Add capers, anchovies and olives, simmer for 5 minutes covered. Finely crush with a pestle, add the rest of the olive oil and season with pepper. Serve on toast, with raw vegetables or cold fish.
